Kate's Raisin, Date, Nut Stollen (Yeast Free German Fruitcake) is a sweet and aromatic, yeast-free cake that has a rich history rooted in German Christmas traditions. First mentioned in historical records in the 14th century, stollen has been enjoyed widely in Germany, and the tradition of baking stollen has spread internationally over the past few hundred years. The recipe features a range of ingredients, including raisins, dates, and almonds that infuse the cake with a complex, delectable flavor. Since the recipe does not use yeast, the bake time must be longer than traditional bread.
