Ingredients

1 cup parsley , chopped
10 ounces frozen chopped spinach
1 medium onion , chopped
2 tablespoons oil or 2 tablespoons Crisco
1 small handful oatmeal
1 teaspoon salt
1/4 teaspoon pepper
4 extra large eggs
2 lbs ground beef , round or 2 lbs chuck
4 eggs
1/2 cup water
1 teaspoon salt
1 cup flour ( extra if needed )
Oma Reich's Maultaschen is a traditional German dish that originated in the Schwaben region. It consists of a pasta dough that is filled with spinach, parsley and ground beef. This hearty meal offers a perfect balance of savory flavors and is a favorite comfort food for many Germans. Instructions

1.In a pan, sauté the onion in oil until translucent. Add spinach, oatmeal, parsley, salt and pepper and cook until all the liquid is evaporated.
2.Mix together the ground beef with 4 eggs and water, adding flour until it reaches a dough-like consistency.
3.Divide the dough into small balls and roll them out into thin circles.
4.On every circle, put a spoonful of the spinach filling and fold in half then seal the edges.
5.Boil the maultaschen for 20 minutes in salted water.
6.Optional: Fry maultaschen after boiling for a crispy outer layer.
