Ingredients

1/2 cup red wine vinegar
1 3/4 cups red wine

1 1/2 - 2 lbs beef top round roast
1/2 cup flour
2 teaspoons salt
1 teaspoon fresh ground black pepper
2 tablespoons vegetable oil
3/4 cup chopped seeded tomatoes
3/4 cup water ( approximately )
2 tablespoons cream sherry
1 tablespoon light brown sugar , plus additional to taste
1 tablespoon fresh lemon juice ( to taste )
parsley sprig ( to garnish )
sour cream ( optional , to serve )
Bavarian Beef Sauerbraten is a classic German recipe that has been enjoyed for generations. Instructions

1.In a large bowl, mix together the red wine vinegar, red wine, onions, parsley stems, peppercorns, bay leaves, and cloves.
2.Add the beef top round roast to the marinade, making sure it is fully coated, cover the bowl with a cling film wrap and store it in the fridge for 2-3 days.
3.Preheat oven to 325°F (160°C).
4.Remove the beef from the marinade and wipe off any excess. Reserve the marinade.
5.Mix together the flour, salt, and black pepper, and coat the beef with the mixture.
6.Heat the vegetable oil in a dutch oven over medium-high heat, add the beef to the pot and cook until browned on all sides, approximately 10-15 minutes. Add the tomatoes, marinade, and enough water to cover the roast, then bring the mixture to a simmer.
7.Cover the pot and transfer it to the oven, bake for about 2 1/2 to 3 hours, or until the beef is very tender.
8.Remove the beef to a platter and tent it with a foil to keep it warm.
9.Skim any fat from the pot's surface, add the sherry, brown sugar, and lemon juice. Simmer the mixture for about 10 minutes on medium heat until it has thickened to your liking.
10.Adjust the seasoning with salt and brown sugar to your liking. Strain the sauce through a fine mesh strainer and pour it over the beef to serve. Garnish with parsley sprigs, and serve with a dollop of sour cream if desired.
