2 cups unbleached flour

1 cup unsalted butter , NO margarine
2 egg yolks
4 cups fruit , fresh , canned , frozen
1/2 cup sugar , if fresh fruit is used
1/4 cup water
2 tablespoons cornstarch
1 egg white
1 tablespoon sugar
1/2 cup almonds , toasted , sliced
2 tablespoons sugar
1 teaspoon vanilla extract
1 cup heavy cream , whipped

Instructions

1.Preheat oven to 350°F (175°C).
2.In a bowl, mix together flour and sugar. Cut in butter until mixture is crumbly. Mix in egg yolks.
3.Press dough into a 10-inch (25cm) tart pan with a removable bottom.
4.Bake for 20-25 minutes or until lightly browned. Cool.
5.Arrange fruit on cooled crust. If using fresh fruit, mix 1/2 cup sugar and 1/4 cup water in a saucepan. Bring to a boil. Mix cornstarch and 2 tablespoons water. Add to saucepan. Cook while stirring for 1-2 minutes until thick. Spoon over fruit.
6.Beat egg white until stiff. Gradually add sugar, beating until glossy. Fold in almonds and vanilla. Spread over fruit.
7.Bake for 20-25 minutes or until meringue is lightly browned. Cool.
8.Before serving, top with whipped cream.
