Ingredients

1/4 cup flour
1/4 cup moderately hot water , about 110 degrees
1 tablespoon sugar
1 package yeast
2 cups all-purpose flour
1 teaspoon salt
1/4 cup beer
6 tablespoons milk
2 tablespoons oil
1 medium onion , finely chopped
1 cup creme fraiche
6 ounces soft white cheese ( fromage blanc )
1/4 teaspoon pepper
1/2 teaspoon salt
4 pinches nutmeg
3 ounces bacon , chopped
arugula
lemon vinaigrette
shaved gruyere or shaved parmesan cheese
good quality olive , sliced ( or chopped )
sliced grape tomatoes or chopped roma tomato
Tarte Flambée, also known as Flammekueche, is a traditional dish from France and Germany. The thin, crispy crust is similar to pizza dough but is topped with a creamy mixture of creme fraiche, soft white cheese, and onions. Instructions

1.Preheat your oven to 500 F (260 C) and place a baking stone or steel in the lower third of the oven.
2.In a mixing bowl, add the moderately hot water, sugar, and yeast. Let sit for a few minutes to activate the yeast.
3.Add the all-purpose flour, salt, beer, milk, and oil to the mixing bowl. Mix all the ingredients together until the dough comes together and forms a ball.
4.Knead the dough for a few minutes and let it rest under a towel for 30 minutes.
5.In the meantime, chop the onion and mix it with the creme fraiche, soft white cheese, pepper, salt, and nutmeg. Set aside.
6.Take the dough and stretch it out as thinly as possible, using your hands or a rolling pin.
7.Place the dough on a baking sheet lined with parchment paper.
8.Spread the onion and cheese mixture over the dough, leaving a small border around the edges.
9.Top the tart with chopped bacon, arugula, sliced olives, and sliced tomatoes.
10.Bake the Tarte Flambée in the oven for 10-15 minutes or until the edges are golden brown and the cheese is bubbling.
11.Remove the Tarte Flambée from the oven and let it cool for a few minutes before slicing and serving.
