Ingredients

1 3/4 cups red wine vinegar
1/2 cup apple cider vinegar
2 onions , sliced
2 carrots , sliced
2 bay leaves
1 teaspoon whole allspice
1 teaspoon mustard seeds
3 whole cloves
2 tablespoons black peppercorns
1 tablespoon sugar
1 tablespoon salt
4 cups plain well-mashed potatoes made from peeled red potatoes
flour
3/4 teaspoon baking powder
1 egg
salt
3 1/2 lbs beef round steak ( cut into 1 1/2 in thick slices or left whole , see notes )
1 tablespoon canola oil
8 gingersnaps , broken into pieces

Instructions

1.In a large pot, combine the red wine vinegar, apple cider vinegar, onions, carrots, bay leaves, allspice, mustard seeds, cloves, black peppercorns, sugar, and salt. Add the beef and enough water to cover, then bring to a boil.
2.Reduce the heat and simmer until the beef is tender, usually 3-4 hours. Remove the beef and set aside. Strain the liquid into a separate pot and discard the solids.
3.In the meantime, in a separate bowl, mix the well-mashed potatoes with flour, baking powder, egg, and salt to form a dough.
4.Roll the dough into small balls and add them to the simmering liquid. Cook for 20-30 minutes until the dumplings are cooked through.
5.Break the gingersnaps into pieces and stir them into the liquid to thicken the sauce. Return the beef to the pot and heat through before serving.
