1 lemon , rind of , finely grated
5 large eggs
7 ounces caster sugar
8 -10 tablespoons strawberry jam
4 tablespoons water
2 ounces blanched and chopped almonds , toasted
1 lb fresh strawberries

Instructions

1.Preheat the oven to 180°C (160C fan forced) and line a 23 cm (9 inch) tin with baking paper.
2.In a bowl, sift together the flour, cornflour, baking powder and lemon rind. Set aside.
3.Using a hand beater, beat the eggs and sugar together for 10 minutes until thick and creamy. Gently fold in the flour mixture in three batches until just combined.
4.Pour the mixture into the prepared tin and bake for 25 minutes or until golden and cooked.
5.Remove the cake from the oven and allow to cool slightly.
6.In a small pan, heat the strawberry jam and water over low heat.
7.Cut the cake horizontally into three layers. Brush each layer with a few tablespoons of the strawberry mixture. Spread whipped cream over the first two layers, then place the top layer on. Ice the top layer with whipped cream and decorate with fresh strawberries and almonds. Refrigerate until ready to serve.
