Ingredients

1 lb veal cutlets ( for Wiener schnitzel ) or 1 lb pork cutlet ( for jaeger schnitzel )
1/4 cup all-purpose flour
1/2 teaspoon pepper
1 egg , beaten
1/2 cup buttermilk
3/4 cup fine dry breadcrumb
1/2 - 1 cup canola oil
lemons , cut into wedges ( for Wiener schnitzel ) or german gravy ( for jaeger schnitzel )
1/4 cup butter
1/4 cup flour
1 1/2 cups homemade beef broth or 1 1/2 cups canned beef broth
salt & freshly ground black pepper
1/8 teaspoon nutmeg
1 onion , diced
1 medium tomatoes , diced
1 lb fresh mushrooms
Schnitzel is a traditional German dish that has become a staple in the culinary repertoire of many countries. This dish is simple to prepare and can be on the table in less than 30 minutes. The crispy texture of the crust will make anyone who loves fried dishes happy, while the juicy and delicious meat is perfect for dinner or lunch. In German cuisine, it’s commonly accompanied by roasted potatoes, mashed potatoes, cucumber salad, red cabbage or mixed greens.

Instructions

1.Place the flour and pepper in a shallow dish and mix well. In another shallow dish, whisk together the egg and buttermilk.
2.Place the breadcrumbs in a third shallow dish. Coat each piece of veal or pork with flour mixture, shaking off any excess. Dip in egg mixture, then coat with breadcrumbs, pressing the breadcrumbs onto the meat to help them adhere.
3.In a large skillet, heat the canola oil over medium heat. Once the oil is hot, add the breaded cutlets and cook for 3-4 minutes on each side or until golden brown and crispy. Transfer to a paper towel-lined plate to remove any excess oil.
4.For Jaeger schnitzel, melt the butter in a large frying pan over medium heat. Add flour and whisk together to form a paste.
5.Slowly pour in beef broth while whisking constantly until incorporated. Allow the mixture to cook and thicken for about 5 minutes, stirring occasionally.
6.Add onions to the frying pan and cook until they are soft and translucent, about 5 minutes. Add diced tomato and mushrooms and cook for an additional 10 minutes, stirring occasionally.
7.Return the cutlets to the pan with the mushroom gravy and heat for 5-10 minutes before serving. For Wiener schnitzel, serve with fresh lemon wedges.
