Instructions

1.Preheat the oven to 350°F. Grease a 9-inch round cake pan.
2.In a medium bowl, cream the butter and 3/4 cup sugar together until light and fluffy.
3.Beat in the eggs one at a time, then stir in the grated lemon rind.
4.In a separate bowl, whisk together the flour, cornstarch, and baking powder. Stir the dry ingredients into the wet mixture.
5.Pour the cake batter into the prepared pan, and bake for 20-25 minutes or until the cake has turned golden brown on top.
6.Take the cake out of the oven and let it cool down on a wire rack.
7.Melt 1 teaspoon butter in a frying pan, add 1/4 cup sugar and the almonds/hazelnuts. Stir constantly until sugar has melted and caramelized.
8.Spread the nuts onto a greased baking sheet to cool down completely.
9.To make the buttercream filling, whisk egg yolks until creamy. In a saucepan, mix the 3/4 cup sugar, water and cornstarch and heat it over medium heat until thickened. Stir the mixture constantly to prevent lumps. Gradually pour the sweet water over the egg yolks while whisking continuously. Beat the butter until fluffy, and then add it to the egg yolk mixture in small portions.
10.Cut the cooled cake into three equal layers. Spread buttercream filling onto the bottom layer and top with the second layer. Spread buttercream on top of the second layer too, and add the final cake layer. Use the remaining buttercream to cover the entire cake, and sprinkle the caramelized nuts on top of the cake.
11.Chill the cake for at least 1 hour before serving.
