3 lbs potatoes
2 eggs
1 teaspoon salt
3 tablespoons all-purpose flour or 3 tablespoons matzo meal
1/2 teaspoon baking powder
1 onion , minced
black pepper , to taste
paprika , to taste
vegetable oil ( for frying )

Instructions

1.Peel and grate the potatoes and onion into a bowl. Squeeze to remove excess liquid and transfer to a clean, dry cloth to remove any more liquid.
2.Mix in the eggs, flour (or matzo meal), baking powder, salt, black pepper, and paprika.
3.Heat up some vegetable oil in a skillet over medium heat. Using a 1/4 cup measure, spoon the batter into the skillet making sure to spread it out into a thin layer.
4.Fry each pancake for about 2-3 minutes on each side until golden brown. Remove from skillet and let cool.
