2 teaspoons shortening

Instructions

1.In a bowl, using your mixer at medium speed, beat together the flour, butter, confectioners' sugar, egg yolk, vanilla extract, salt, and grated lemon rind until the dough comes together.
2.Using your hands, shape the dough into small balls, flatten them slightly, and make a small indentation in the middle of each cookie.
3.Spoon 1/2 teaspoon of raspberry jam into the center of each cookie.
4.Preheat the oven to 350°F (180°C). Bake the cookies for 12-15 minutes or until lightly golden. Let the cookies cool down completely on a wire rack.
5.Melt together the chocolate and shortening in a double boiler and let it cool for a minute or two, stirring occasionally.
6.Dip the bottom half of each cookie in the melted chocolate, then place it onto parchment paper for the chocolate to dry and harden.
