Ingredients

1 package frozen chopped spinach ( or 1 lb fresh , washed , trimmed and chopped )
2 chopped hard-boiled eggs ( optional )
3 tablespoons unsalted butter
5 tablespoons flour
1 1/3 cups milk
1/2 cup shredded emmenthaler cheese ( I 'm sure other types will work as well )
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon sugar
1/4 teaspoon nutmeg
2 large eggs , separated

Instructions
