Ingredients

1 1/2 cups stale bread cubes
milk , to soak bread cubes
2 lbs ground lean meat ( mixture of pork and veal or beef )
1 large onion , peeled and minced
2 eggs , beaten
3 flat anchovy fillets , drained and minced
salt and pepper , to taste
4 cups beef bouillon
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons flour
1 lemon , juice of ( about 1/4 cup )
3 tablespoons capers , drained

Instructions

1.In a medium bowl, soak the stale bread cubes in milk for 5-10 minutes.
2.In a large mixing bowl, combine the ground meat, soaked bread cubes, minced onion, beaten eggs, minced anchovy fillets, salt, and pepper. Mix well to combine.
3.Shape the mixture into meatballs about the size of a golf ball.
4.In a large pot, bring the beef bouillon to a boil. Add the meatballs and let them simmer for about 10-15 minutes, or until they are cooked through.
5.Meanwhile, in a separate saucepan, melt the butter over medium heat. Stir in the flour, and whisk until smooth.
6.Gradually add the beef bouillon (from the pot the meatballs are cooking in) to the butter mixture, whisking constantly. Cook the mixture until it thickens and starts to boil.
7.Add the lemon juice and capers, and stir to combine.
8.Once the meatballs are cooked, remove them from the pot with a slotted spoon. Add them to the caper sauce and gently stir to coat.
9.Serve the meatballs in caper sauce over cooked potatoes or egg noodles and garnish with fresh parsley, if desired.
