The cake is soaked in a rum syrup, giving it a moist and flavorful texture. It is typically shaped into a ring and decorated with cream and cherries. Although it requires some effort to make, this cake is well worth the time and effort for a special occasion.

Instructions

.Preheat the oven to 350°F (175°C) and grease a 12-cup Bundt pan.
.In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks one at a time and stir in the lemon zest and rum.
.In a separate bowl, whisk together the flour and baking powder, then gradually mix it into the butter mixture until just combined.
.In another bowl, beat the egg whites until stiff peaks form, then fold them into the batter.
.Pour the batter into the prepared pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
.While the cake is baking, prepare the syrup by combining the sugar and water in a saucepan over medium heat. Stir until the sugar dissolves, then remove from the heat and stir in the rum.
.When the cake is done, remove it from the oven and let it cool in the pan for 10 minutes.
.Meanwhile, prepare the filling by creaming together the butter and apricot jam until light and fluffy.
.To assemble the cake, invert the cooled cake onto a serving platter and pierce the top all over with a toothpick or fork.
.Spoon the syrup evenly over the top of the cake, allowing it to soak into the holes.
.Spread the apricot filling over the top of the cake.
.To make the almond topping, melt the butter in a saucepan over medium heat. Add the sugar and water, stirring until the sugar dissolves.
.Add the sliced almonds and stir until they are coated in the sugar mixture.
.Spread the almond mixture over the top of the apricot filling.
