8 mushrooms , thinly sliced

Instructions

1.In a large pot, sauté cucumber, scallions and garlic until tender.
2.Add in tomato juice, honey, salt and pepper, and simmer for 10 minutes.
3.Add mushrooms, sweet pepper and dill weed, continue to cook for 5 minutes.
4.Turn off the heat and let the soup cool down.
5.Using an immersion blender, blend the soup until smooth.
6.Add sour cream, adjust seasoning and mix well.
