Ingredients

200 g unsalted butter
120 g caster sugar
4 large eggs ( soft )
400 g self raising flour
100 g sultanas
110 g currants
1 lemon , rind of , grated
2 tablespoons rum
1 pinch salt
1 -2 tablespoon milk , if needed
Kugelhupf is a traditional Austrian cake, and it is widely popular in the neighboring European countries. Instructions

1.Preheat the oven to 180°C.
2.In a bowl, cream the butter and sugar until pale and fluffy.
3.Add eggs one by one to the mixture and beat well.
4.Sift the flour and add it gradually, beating well after each addition.
5.Fold in the sultanas, currants, grated lemon zest, rum, and salt.
6.If the mixture is too thick then add 1-2 tablespoons of milk.
7.Grease and flour a 25cm Kugelhupf tin and pour the batter into it.
8.Bake for 50-60 minutes or until a skewer inserted into the center of the cake comes out clean.
9.Allow the cake to cool for 10 minutes in the tin before turning it out onto a wire rack to cool completely.
