Instructions

1.Preheat the oven to 350°F. Grease and flour two 9-inch cake pans.
2.In a small bowl, mix together the cocoa and boiling water until smooth.
3.In a large mixing bowl, cream the butter and agave nectar together until light and fluffy.
4.Beat in the egg yolks and vanilla.
5.Combine the flour, baking soda, and salt in a separate bowl, then gradually add to the butter mixture, alternating with buttermilk and milk, stirring well after each addition.
6.Beat the egg whites separately until stiff peaks form, then fold into the batter.
7.Fold in the cocoa mixture, stirring until well combined.
8.Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
9.To make the filling, combine the agave nectar, egg yolks, butter, and vanilla in a saucepan.
10.Cook and stir over medium heat until thickened and bubbly.
11.Reduce the heat, cook and stir for 2 minutes longer.
12.Remove from heat and stir in coconut and pecans.
13.Cool the cake layers in the pans for 10 minutes before removing them to wire racks to cool completely.
14.Spread the filling evenly between the layers and on top of the cake.
