Ingredients

1/2 pound raw shrimp - peeled , deveined , and cut into small pieces
1/2 pound albacore tuna , cut into small pieces
3/4 cup lemon juice , divided
3/4 cup lime juice , divided
1 mango , peeled and diced

1 tomato , diced
1/2 yellow onion , diced
1 jalapeno pepper , seeded and diced
1 teaspoon mango hot sauce
1 teaspoon sriracha sauce
2 strips bacon , chopped
1 head napa cabbage , leaves separated
1 head radicchio , leaves separated

Instructions

1.In a large glass bowl, combine the shrimp, tuna, 1/2 cup lemon juice, and 1/2 cup lime juice. Mix well and refrigerate for 2-3 hours.
2.In a medium saucepan, heat the pale ale over medium-high heat until it comes to a boil. Reduce the heat and simmer for 10 minutes, stirring occasionally.
3.Add the tomato, onion, jalapeno, mango hot sauce, and sriracha to the simmering ale. Stir and cook for 5 minutes or until the vegetables are tender.
4.Cook the bacon in a skillet over medium heat until crispy. Set aside.
5.Drain the shrimp and tuna mixture and discard the liquid. Add the remaining lemon juice, lime juice, and diced mango. Mix well.
6.To assemble the lettuce wraps, place a small amount of the ceviche mixture on a napa cabbage or radicchio leaf. Top with a sprinkle of bacon. Enjoy!
