Ingredients

1 cup all-purpose flour
1/4 cup sugar

2 large egg yolks ( save 1 white for the filling )

1 lb farmer cheese
1 cup sour cream
3/4 cup sugar , divided
1/4 cup milk
2 tablespoons cornstarch
2 teaspoons vanilla extract
1/2 grated lemon , zest of
1/4 teaspoon salt
4 large eggs , separated , plus
1 large egg white , at room temperature
1/4 cup golden raisin
1/4 cup sliced blanched almond
German Farmer’s Cheesecake Topfentorte or Topfen Torte is a classic dessert in Austria. This heavenly cheesecake is made from farmer cheese, sour cream, eggs, vanilla, lemon zest, and golden raisins, filled in a shortbread-like crust. This cake is typically enjoyed on special occasions or weekends with friends and family. It can be served plain or sprinkled with powdered sugar or fresh berries for added taste. Though it is time taking, the result is worth the effort.

Instructions

1.Preheat the oven to 350°F and butter an 8-inch springform pan.
2.In a food processor, mix 1 cup flour, 1/4 cup sugar and a pinch of salt. Pulse until combined.
3.Add 7 tablespoons butter, 2 egg yolks, 1/2 grated lemon zest, and 1/4 teaspoon vanilla extract. Pulse until the mixture is moist and crumbly.
4.Transfer the mixture into the springform pan. Press onto the bottom and 1 inch up the sides.
5.Bake for 20 minutes. Let cool for 10-15 minutes.
6.In a mixing bowl, combine 1 lb farmer cheese, 1 cup sour cream, 1/2 cup sugar, 1/4 cup milk, 2 tablespoons cornstarch, 2 teaspoons vanilla extract, 1/2 grated lemon zest, 1/4 teaspoon salt, 4 egg yolks, 1 egg white. Mix well until smooth.
7.In another bowl, beat 4 egg whites until stiff peaks form. Add 1/4 cup sugar gradually, and beat until glossy.
8.Fold egg white mixture into cheese batter until smooth. Fold in 1/4 cup golden raisin and 1/4 cup sliced blanched almond.
9.Carefully pour the mixture into the prepared crust.
10.Bake for 1 hour or until the cheesecake is set and the top is golden brown.
11.Let the cake cool completely at room temperature and then refrigerate for at least 4 hours before serving.
