Ingredients

2 lbs halibut
1 lb sole or 1 lb flounder
1 carrot , chopped
1 stalk celery , chopped
1 onion , chopped
1/4 cup chopped parsley
1 1/2 lbs raw shelled prawns ( shrimps )
butter
3 tablespoons flour
1/4 cup sour cream
1 egg yolk
salt
fresh ground black pepper
1 cup self-raising flour
1/4 teaspoon salt
4 ounces butter
1 egg , beaten ( reserve 1 teaspoon and mix with a few drops of water for glazing )
1 teaspoon grated lemon peel

Instructions

1.Preheat oven to 375 degrees F.
2.In a large saucepan, poach the halibut and sole or flounder with the chopped carrot, celery, onion, and parsley until the fish is cooked, approximately 15 minutes.
3.Remove the fish from the pan, reserve the cooking liquid, discard skin and bones and cut the fish into pieces.
4.Melt butter in a large skillet and add flour, whisk together until smooth.
5.Slowly add the reserved cooking liquid to the skillet, whisking constantly until the mixture is smooth and heated through.
6.Stir in the sour cream, egg yolk, salt, and black pepper and cook for 2-3 minutes.
7.Fold in the cooked fish and prawns or shrimp.
8.To make the pastry, sift the flour and salt together into a mixing bowl.
9.Cut the butter into small pieces and rub into the flour mixture until it resembles coarse crumbs.
10.Add the beaten egg and lemon peel.
11.Knead the mixture until smooth and elastic.
12.Roll out the pastry and cut into two crusts, one for the bottom and one for the top.
13.Place the bottom crust in a 9 inch pie dish and prick with a fork.
14.Add the seafood mixture to the dish.
15.Cover with the top crust.
16.Cut slits in the top for steam to escape, and glaze with the reserved egg yolk mixture.
17.Bake for 40-45 minutes, until pastry is golden brown and the filling is hot and bubbly.
