Ingredients

6 russet potatoes
water
salt
2 tablespoons butter
1/2 cup onion , minced
1/4 lb sausage meat
1 tablespoon chopped parsley
1/2 teaspoon salt
1/4 black pepper
Gefullte Kartoffeln is a German classic that dates back to the early twentieth century, particularly around Hamburg. Hamburg was famous for its various potato dishes and this one is a staple. This dish basically means stuffed potatoes which uses russet potatoes that are baked and then stuffed with savory and flavorful sausage meat and mashed potatoes. The buttery and crispy exterior with soft and creamy filling is a favorite all around the world. In Germany it’s often served as a main dish with sides such as coleslaw, beetroot salad, and pickles. It’s a dish mostly consumed during autumn, when the potatoes are at their best.

Instructions

1.Preheat the oven to 400°F.
2.Wash and prick the potatoes all over with a fork, then bake them for 1 hour until cooked.
3.While the potatoes are cooking, saute the onions in butter until soft and translucent.
4.Add the sausage meat, parsley, salt, and pepper, and cook until brown.
5.Cut the top off each potato and scoop out the flesh, leaving a shell.
6.Mash the flesh, add the sausage mixture and mix until combined
7.Stuff the potato mixture back into the potato shell until full and bake for another 15-20 minutes until the tops are lightly browned.
8.Serve hot.
