Ingredients

1 can kale
salt

2 onions , diced
1 cup beef broth
1 lb smoked streaky bacon ( not slices-purchase a piece of smoked bacon from a deli )
1 large potato
1 teaspoon salt ( to taste )
1/4 teaspoon pepper ( to taste )
1 pinch ground nutmeg
4 smoked pork chops ( Kassler ) or 4 small smoked sausage ( Pinkel or any other more salty one )
Gruenkohl, also known as kale, is a traditional German winter dish that has been around for centuries. It is typically made with kale, potatoes, and smoked pork, and is a popular dish during the cold winter months. This hearty dish is warm, comforting, and perfect for those cold winter days when you need something to warm you up from the inside out. Gruenkohl is easy to make, and can be adapted to include different ingredients depending on what you have in your pantry or fridge.

Instructions

1.Put the can of kale with liquid in a 2/3 quart pot, add salt to taste (since the kale is cooked and canned with salt, there is no fixed amount of salt to add).
2.Bring to the boil, turn down the flame to minimum.
3.In a large frying pan (or preferably a Dutch oven ), melt the bacon drippings (or lard), add the chopped onions, add the beef broth. Cook on low heat until the onions are translucent and soft.
4.The smoked bacon is cut into approx. 1 inch square pieces, and fried in the onions/broth mixture. (The smoked bacon does not need to be cooked again, it just needs to be heated and browned up a bit.)
5.The potato is peeled and cubed into small dice, added to the onions/broth/bacon mixture, and cooked until the potato softens and breaks apart, turning the mixture into a mushy /creamy consistency.
6.The resulting mixture is poured over the kale and heated on the smallest flame setting. If the mixture is too liquid or too dry, adjust with additional beef broth or a cornstarch slurry (1 tablespoon cornstarch in 1 tablespoon of cold water) as needed.
7.Add salt and pepper to taste, and a pinch of nutmeg.
8.The smoked pork chops (or sausages) are heated up separately, and serve on top of the kale.

PROS

Gruenkohl is a traditional German winter dish that is hearty, comforting and easy to make.

It is a great way to use up leftovers from your fridge, and can be served as a complete one-pot meal.

It is loaded with vitamins, minerals and antioxidants, thanks to the kale that is the main ingredient.

CONS

The dish is fairly high in fat due to the use of bacon drippings or lard and smoked bacon.

It may not appeal to those who do not like the taste of kale.
