Jägerschnitzel is a classic German dish that is typically made with thinly sliced pork or veal cutlets, breaded and fried until crispy. The dish is named after the Jäger, or hunter, as it was traditionally served after a long day of hunting in the German forests. Today, it is a staple in German cuisine and can be found in many restaurants and homes throughout Europe and North America. The savory mushroom gravy is the perfect accompaniment to the crispy cutlets, providing a rich and satisfying meal for any occasion. Serve it with mashed potatoes or spaetzle and a side of green beans or salad for a complete and delicious dinner.

Instructions

.Cut the meat into thin slices and pound them with a meat mallet until they are about 1/4 inch thick.
.Beat the eggs in a shallow dish. Mix the breadcrumbs and flour in another dish.
.Heat the oil in a large skillet over medium-high heat. Dip each cutlet in the egg to coat, then dredge in the breadcrumb mixture to coat.
.Cook the cutlets in the hot oil until golden brown, about 3 minutes per side.
.Remove the cutlets from the skillet and keep them warm.
.In the same skillet, cook the bacon, onion, and mushrooms until the bacon is crisp and the onion is translucent.
.Add the tomato paste, water, wine, thyme, paprika, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
.Stir in the parsley and sour cream, then add the cutlets back to the skillet to warm through.
.Serve hot with mashed potatoes or spaetzle and a side of green beans or salad.
