200 g grated apples ( approx 2 med apples )
1 cup Irish whiskey ( you can use brandy or rum )
1/2 cup Irish whiskey , extra
1 1/4 cups brown sugar , packed firmly
185 g butter , softened
3 eggs
1/2 cup hazelnut meal
1 1/2 cups plain flour
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon bicarbonate of soda
Individual Irish Pudding Cake is a classic Irish dessert that has been enjoyed for generations. It is a variation of the traditional Irish Christmas pudding, which dates back to the 16th century. Instructions

1.Grease a 12-hole muffin pan and preheat oven to 180°C.
2.In a saucepan, combine the chopped dates, prunes, raisins, cranberries, sultanas, grated apples, Irish whiskey, and half a cup of brown sugar over medium heat.
3.Stir for 10-15 minutes until the fruit is softened and the mixture is thick and sticky.
4.Let the mixture cool for 10 minutes, then add softened butter, remaining brown sugar, and eggs while continuously stirring.
5.Mix in hazelnut meal, plain flour, nutmeg, ginger, cloves, and bicarbonate of soda to form a batter.
6.Divide the batter equally among the muffin pan cavities and bake for 20-25 minutes until the tops are golden and a skewer inserted in the center comes out clean.
7.While the cakes are still warm, brush extra Irish whiskey over the top of each cake.
8.Let them cool for a few minutes before removing from the pan. Serve warm or at room temperature with whipped cream or Irish whiskey cream as desired.
