Instructions

1.Preheat oven to 325°F.
2.In a large bowl, mix together 9 cups of Oreo cookie crumbs, coffee granules and melted butter until well combined. Press the mixture firmly into the bottom of a 10 inch springform pan.
3.In a separate bowl, beat the cream cheese until smooth. Add the eggs, one at a time, beating well after each addition.
4.Stir in the rum extract, Irish liqueur and strong coffee, mixing well.
5.Pour the cream cheese mixture over the crust and bake for 2 hours.
6.Remove from the oven and let cool for 30 minutes.
7.In a separate bowl, whisk together the sweetened condensed milk and 1 lb of Oreo cookie crumbs. Spread evenly over the cheesecake.
8.Drizzle the melted semisweet chocolate on top of the cheesecake and spread evenly.
9.Top with sliced toasted almonds, mandarin oranges, raspberries or raspberry sauce, as desired.
10.Chill the cheesecake for at least 4 hours before serving.
