Ingredients

4 1/2 lbs beef brisket
1/4 cup salt
16 cups water
2 cups salt ( the sea salt is better ) or 3 cups sea salt ( the sea salt is better )
1/2 cup sugar
4 bay leaves
16 peppercorns
4 teaspoons pickling spices
4 garlic cloves , halved

Instructions

1.In a large container or plastic bag, combine 1/4 cup salt and 8 cups of water. Stir until the salt dissolves.
2.Add the brisket to the container or bag and add enough water so the meat is fully submerged. Cover or seal the container or bag and refrigerate for 3 days.
3.After 3 days, drain and rinse the beef. In a large pot, combine the remaining water, 2-3 cups of sea salt, sugar, bay leaves, peppercorns, pickling spices, and garlic cloves. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
4.Add the brisket to the pot and simmer for 2-3 hours or until the meat is fork-tender. Once done, remove from heat and let it cool for 10-15 minutes before slicing.
