Ingredients

1 ounce butter
2 lbs lamb or 2 lbs beef , cubed
1 large onion , coarsely chopped
2 carrots , chopped
1 tablespoon all-purpose flour ( optional )
1/2 pint beef stock
2 tablespoons tomato puree
1/2 tablespoon sugar
2 potatoes , cubed ( optional )
1 bottle Guinness stout or 1 large glass red wine
1 bouquet garni ( sprig of parsley , sprig of thyme , 1 bay leaf tied up in muslin )
salt & freshly ground black pepper

Instructions

1.In a large pot or Dutch oven, melt the butter over medium-high heat.
2.Add the cubed lamb or beef and cook until browned on all sides.
3.Add the chopped onion, carrots, and flour (if using), and stir to coat the vegetables and meat.
4.Pour in the beef stock, tomato puree, and sugar and stir to combine.
5.Add the cubed potatoes (if using), bottle of Guinness or red wine, and bouquet garni. Season with salt and freshly ground black pepper to taste.
6.Bring the stew to a simmer and reduce the heat to low. Cover and cook for 2-3 hours until the meat is tender and the vegetables are soft.
7.Remove the bouquet garni and season with additional salt and pepper to taste. Serve hot with Tabasco sauce on the side.
