4 cups lacinato ( dinosaur ) kale - washed , stemmed , and torn into pieces
1 lemon , juiced
salt and pepper to taste
1 pinch harissa , or to taste ( optional )
1 tablespoon chopped fresh flat-leaf parsley , or to taste ( optional )

Instructions

1.In a large pot or Dutch oven, heat the olive oil over medium heat.
2.Add the onion and cook for about 5 minutes until softened.
3.Add the chorizo and cook for another 5 minutes, stirring occasionally to brown slightly.
4.Add the celery and carrot and cook for another 5-7 minutes, or until softened.
5.Add the cumin, paprika, turmeric, salt, black pepper, saffron threads, and garlic, and stir well to combine. Cook for another 1-2 minutes.
6.Add the sweet potatoes and chicken broth, and bring to a boil. Reduce heat and simmer for about 15-20 minutes, or until the sweet potatoes are cooked through.
7.Add the kale and lemon juice, and cook for another 5 minutes, or until the kale is tender.
8.Season with salt and pepper to taste. Stir in harissa if desired.
