Ingredients

3 lbs boneless beef roast ( chuck or round , trimmed , cut into 1-1/2 inch cubes )
salt & freshly ground black pepper
4 medium onions , coarsley chopped
3 carrots , pared , sliced thick
3 garlic cloves , bruised , peeled
6 whole allspice
3 whole cloves
2 sprigs fresh parsley
2 sprigs fresh thyme or 1/4 teaspoon dried thyme
1 bay leaf
1 dried red chili pepper
1 can beef broth
1 bottle Guinness stout
2 teaspoons tomato paste
2 tablespoons unsalted butter
2 cups fresh mushrooms , thickly sliced
1 tablespoon red wine vinegar ( or to taste )
2 -3 tablespoons chopped fresh parsley

Instructions

5.Tie the allspice, cloves, parsley, thyme, bay leaf, and dried chili together in a cheesecloth.

7.Add the beef back into the pot, along with the spice bundle.
8.Bring the mixture to a boil, then reduce the heat to low.
9.Cover and simmer for 3 hours, or until the beef is tender.
10.In a large saute pan, melt the butter over medium-high heat.
11.Add the sliced mushrooms and cook until they are browned, about 5 minutes.
12.Remove the spice bundle from the pot and discard.
13.Stir in the red wine vinegar.
14.Serve the beef topped with the mushrooms and chopped fresh parsley.
