Ingredients

3 large pineapple , ripe
2 1/2 cups sugar
2 teaspoons lime juice
Pineapple Beer is a popular traditional drink in Liberia, made from fermenting fresh pineapples with sugar and lime juice. The localized drink is quite different from commercial beer globally. The resulting drink is sweet, tart and has the fizz of beer making this drink suitable in place of other sugary drinks for various occassions. This refreshing drink is enjoyed alone or paired with spicy food. Recreating this drink at home is simple and a great way to explore the flavors of Liberia.

Instructions

1.Cut the pineapples into small pieces and put them into a large pot.
2.Mash the pineapples with a potato masher or back of a spoon.
3.Fill the pot with enough water to cover the pineapples and bring to a boil.
4.Reduce heat and let simmer for 20 minutes.
5.Strain the mixture into a bowl, using a fine-mesh sieve to remove all solids.
6.Add sugar to the pineapple liquid while it's still hot and stir to dissolve.
7.Add lime juice and stir well.
8.Leave the mixture to cool down completely.
9.Pour the mixture into an airtight container and store in the fridge for at least 1 hour or until chilled.
10.Serve with ice cubes.

This beverage is a healthy alternative to sugary drinks.
