Ingredients

5 ounces ginger
2 ounces honey
2 ounces lime juice
2 quarts water
1 egg white , beaten
3 cups sugar
1/2 ounce fresh yeast or 1/4 ounce dry yeast
6 drops Angostura bitters

Instructions

1.Peel and cut the ginger into thin slices.
2.Boil the ginger slices with 1 quart of water for 15-20 minutes in a covered pot.
3.Remove pot from heat and add honey and lime juice. Stir well.
4.Add the remaining quart of water.
5.Strain the mixture through a cheese cloth or fine mesh strainer into a large container, such as a pitcher.
6.Add the sugar and mix well until it dissolves.
7.Let the mixture cool to about 85-90°F.
8.Dissolve the yeast in 1/2 cup of lukewarm water and add it to the mixture, stirring well.
9.Cover the container and let sit for about 1 hour at room temperature.
10.Skim off any foam on the surface of the mixture.
11.Add the beaten egg white and stir well.
12.Pour the mixture into clean, airtight bottles and add 1 drop of Angostura Bitters per bottle.
13.Let the bottles sit at room temperature until fully carbonated.
14.Store in a cool place and chill before serving.
