Ingredients

3 -4 slices bacon , diced
1 medium yellow onion , sliced
5 -6 potatoes , thinly sliced into rounds ( White potatoes or Yukon Gold )
1 - 1 1/2 cup chicken stock
salt and pepper , to taste
1 - 1 1/2 cup grated low-fat cheddar and Swiss cheese

Instructions

1.Preheat oven to 375F/190C.
2.In a large skillet, cook diced bacon over medium heat for 5-7 minutes until crispy. Remove bacon from pan and set aside.
3.In the same skillet, add sliced onions and cook until slightly caramelized, about 5-7 minutes. Remove onions and set aside.
4.In a 9x13 inch baking dish, arrange a single layer of sliced potatoes. Season potatoes with salt and pepper.
5.Top potatoes with half of the bacon and half of the caramelized onions. Add another layer of potatoes on top of the bacon and onions and season with salt and pepper. Repeat with remaining bacon, onions, and potatoes, seasoning each layer with salt and pepper.
6.Pour chicken stock over the potato layers until it reaches halfway up the dish. Cover the dish with foil and bake for 35-40 minutes, or until potatoes are tender.
7.Remove foil and sprinkle grated cheese on top of the potatoes. Return dish to the oven and bake for an additional 10-15 minutes, or until cheese is melted and bubbly. Serve hot.
