1 teaspoon caster sugar
1 tablespoon white wine vinegar
4 tablespoons olive oil
1 tablespoon balsmic vinegar
2 tablespoons chopped fresh herbs

Instructions

1.Pre-heat the oven to 180 C (356 F).

4.Place the grated cheese mixture in the center of each pastry square and fold the sides up like a parcel to enclose the cheese.
5.Brush the parcels with melted butter and bake in the pre-heated oven for 10-12 minutes or until golden brown.
6.While the parcels are baking, cut the carrot, parsnip, and courgette into thin strips.
7.In a small bowl, mix together the salt, pepper, sugar, white wine vinegar, olive oil, balsamic vinegar, and chopped fresh herbs to make the dressing.
8.When the parcels are ready, remove them from the oven and serve hot with the sliced vegetables and dressing drizzled over the top.
