300 ml Guinness stout
100 ml clear honey
250 g light muscovado sugar
2 kg boneless pork loin , skinless , ask your butcher for the thick end
champagne or water
3 sprigs flat leaf parsley

Instructions

4.Remove the pork from the pot and let it rest for 10 minutes.
5.Preheat the oven to 400°F (200°C).
6.Slice the pork loin into 2-inch (5-cm) rounds.
7.Place the pork rounds on a baking sheet and brush with the remaining glaze.
8.Bake the pork for 10-15 minutes, or until it's nicely browned and caramelized.
