1 tablespoon vegetable oil
2 lbs stewing beef , cut into 2-inch cubes

salt and pepper
2 tablespoons plain flour
1/2 pint stout beer

1 teaspoon soft dark brown sugar
Beef in Stout, also known as Irish Stew or Guinness Stew, is a popular dish in Northern Ireland and throughout the United Kingdom. The dish is hearty and warming, perfect for cold winter days. Traditionally made with stout beer, beef, onions, and carrots, this updated version omits the carrots and adds mushrooms for extra flavor. The long slow cooking process tenderizes the beef and allows the flavors to meld together, resulting in a delicious and comforting meal.

Instructions

1.Preheat oven to 350F.
2.Melt the butter and oil in a large oven-safe dutch oven.
3.Brown the beef in batches, removing each batch to a plate when browned.
4.Sauté the onions and mushrooms in the same pot until the onions are translucent and the mushrooms are browned.
5.Return the beef to the pot and sprinkle with flour. Stir to coat the beef.
6.Pour in the stout beer and stir to combine.
7.Add the bay leaf and sugar to the pot. Cover and bake in the oven for 2-2.5 hours, or until the beef is tender.
8.Remove from the oven and let sit for 10 minutes before serving.
