2 tablespoons butter , melted and cooled
1 envelope unflavored gelatin
1/3 cup cold water
1 cup unsweetened cocoa powder
3/4 cup water
8 ounces cream cheese
8 ounces reduced-fat cream cheese ( Neufchatel )
2 cups sugar
1 teaspoon peppermint extract
thawed frozen whipped topping
creme de menthe thin candies , halved diagonally ( Andes )

Instructions

1.Crush 20 cookies in a ziplock bag and mix with melted butter. Press onto bottom of a 9-inch springform pan.
2.In a small bowl, sprinkle gelatin over cold water. Let stand for 5 minutes.
3.In a large saucepan, mix cocoa and water until smooth. Cook over medium heat, stirring constantly, until mixture comes to a boil. Cook and stir for 2 minutes longer, then remove from heat.
4.In a separate bowl, beat cream cheeses and sugar until smooth. Gradually beat in chocolate mixture. Add peppermint extract and stir until combined.
5.Heat gelatin mixture in microwave on high for 20 seconds, stirring after 10 seconds. Stir into cream cheese mixture.
6.Fold in whipped topping and pour over crust. Crush remaining 10 cookies and sprinkle on top. Cover and refrigerate overnight.
7.Before serving, garnish with halved creme de menthe candies and mint leaves.
