Ingredients

3 -4 lbs corned beef brisket
1 -2 quart apple juice
2 -3 tablespoons pickling spices ( plus wimpy spice pack that came with brisket )
3 lbs red potatoes
1 cabbage , cored and quartered
2 -3 tablespoons prepared yellow mustard
1/2 cup brown sugar

Instructions

1.Preheat oven to 350°F.

4.Bring the liquid to a boil then reduce heat and allow it to simmer for around 2 hours, until meat is tender.
5.Add red potatoes and cabbage to the pot and bring to a boil. Reduce heat again and allow it to simmer for another 15-20 minutes or until vegetables are tender.
6.Remove the corned beef and vegetables from pot and slice beef against the grain.
7.In a small bowl, mix together the yellow mustard and brown sugar until well combined.
8.Place the sliced corned beef on a large, rimmed baking sheet and brush the mustard-brown sugar glaze generously on top of the meat.
9.Broil the corned beef for 3-4 minutes until the top is crispy and starts to caramelize. Serve the beef slices together with the vegetables and enjoy your delicious Saint Patty's dinner!
