Ingredients

1 lb potato , peeled and quartered
1 cup chopped cabbage
1/2 cup scallion , roughly chopped
1/4 cup scallion , finely chopped
1/2 cup butter
salt and pepper

Instructions

1.Boil the potatoes in salted water until tender.
2.Drain the potatoes, then return them to the pot and mash them.
3.Steam the chopped cabbage until tender.
4.In a small skillet, melt 1/4 cup of the butter over medium heat. Add the roughly chopped scallions and sauté until soft.
5.Add the cooked cabbage and sauteed scallions to the mashed potatoes. Mix well.
6.Add salt and pepper to taste. If desired, melt the remaining butter and drizzle it over the top of the colcannon before serving.
