Ingredients

1 medium head of cabbage ( about 1 1/2-2 lbs )
3 leeks
2 Cornish hens , quartered ( chicken pieces can be used )
1 1/2 teaspoons global gourmet herb seasoning mix ( see separate recipe )
9 ounces sliced bacon
6 sprigs fresh thyme
1/4 - 1/2 cup dry vermouth
2 1/4 cups heavy cream
1/4 teaspoon ground nutmeg
salt & fresh ground pepper , to taste
1 1/2 tablespoons cider vinegar
Irish Cornish Game Hens with Cabbage is a hearty and comforting dish that is perfect for a cozy dinner on cold winter nights. Cornish hens are smaller than regular chickens, and they are known for having a more delicate texture and mild flavor. This recipe features sweet and savory caramelized cabbage cooked with crispy bacon, leeks, and cream. The result is a satisfying and flavorful meal that everyone will love.

Instructions

1.Preheat the oven to 400 degrees F.
2.Cut the cabbage into large wedges and clean the leeks, trimming and discarding the tough green parts. Cut lengthways and rinse well under running water to remove any dirt. Quarter the hens and season with the herb seasoning mix, salt, and pepper.
3.Fry the bacon until crispy and remove from the pan. In the same pan, brown the hens on all sides in the bacon fat. Remove the hens and fry the leeks until golden brown. Add the cabbage to the pan and sauté until caramelized.
4.Add the vermouth to deglaze the pan and cook until reduced by half. Stir in the heavy cream, thyme sprigs, nutmeg, and bacon. Return the hens to the pan, cover with foil, and bake in the oven for approximately 40-50 minutes or until cooked through.
5.Remove the thyme sprigs and stir in the cider vinegar. Serve hot and enjoy!
