Ingredients

1 1/2 lbs roughly chopped cooked potatoes
1/2 lb finely chopped cabbage
1/2 lb leftover corned beef , cut into small pieces
1/2 teaspoon minced garlic
4 tablespoons butter
1/2 cup heavy cream , warmed ( milk is ok , but will not be as rich )
white pepper , to taste
2 green onions , sliced
Colcannon Potatoes are a traditional Irish dish made with mashed potatoes, cabbage, onions and butter. It is often served during the cooler months as a warming and hearty side dish. This version was created by Chef Tim James, who utilizes leftover corned beef to add a savory and salty flavor to the dish. Instructions

1.Steam cook the chopped cabbage until tender, then drain and set aside.
2.Heat the minced garlic in a pan with a tablespoon of butter until fragrant.
3.Add the cooked corned beef and cabbage to the pan and heat through, stirring occasionally.
4.In a separate pot, heat the remaining butter with the warmed heavy cream until melted.
5.Mash the cooked potatoes in the pot with the butter and cream mixture.
6.Add the corned beef, cabbage and garlic to the potato mixture and stir until well combined.
7.Season with white pepper to taste and mix in the sliced green onions.
