Ingredients

4 tablespoons butter
1 medium yellow onion , peeled and sliced
2 lbs potatoes , peeled and sliced
3 cups milk
5 1/2 cups chicken stock ( or use canned )
1/4 cup chopped fresh chives
1/2 teaspoon celery seed
1/4 teaspoon dried thyme , whole
1 cup light cream
salt & freshly ground black pepper

Instructions

1.In a large pot, melt 4 tablespoons of butter over medium heat.

5.Add light cream and mix it well. Adjust the seasoning according to taste.
6.Serve hot in a bowl and top with chopped chives and crisp fried bacon pieces.
