1 1/2 kg potatoes , scrubbed
100 g butter
500 ml milk ( if you want it rich use 3/4 milk to 1/4 cream )
450 g peas
75 g spring onions , chopped
4 tablespoons chopped fresh parsley
salt & freshly ground black pepper
