Instructions

1.Preheat grill to medium-high heat.
2.Cut eggplant into 1/4-inch-thick slices and place on paper towels. Season with salt and let drain for 15 minutes.
3.Grill peppers and zucchini for about 5 minutes per side or until tender. Set aside.
4.In a small saucepan, warm olive oil and garlic over low heat for about 2 minutes. Remove from heat, add basil and 1/2 teaspoon pepper, stir well and let stand for 5 minutes.
5.Cut the grilled peppers and zucchini into thin strips. Line a 9-inch loaf pan with plastic wrap, allowing for a 2-inch overhang on all sides. Lay a single layer of eggplant in the bottom of the pan, trimming as needed so that it lays flat, and then brush it with some of the olive oil mixture. Top with a layer of grilled peppers, pressing down gently. Continue layering the eggplant, peppers, and zucchini, brushing each layer with the olive oil mixture as you go until the pan is full. Fold the overhang over the top of the vegetables, cover with plastic wrap and chill for at least 8 hours or overnight.
6.To make the sauce, in a small saucepan, stir together the white wine and vinegar. Sprinkle the gelatin over, and let stand for 10 minutes to soften. Over medium heat, stir the mixture until the gelatin dissolves. Let cool to room temperature.
7.To serve, unwrap the terrine and invert it onto a cutting board. Remove the plastic wrap. Use a sharp knife to cut the terrine into slices.
8.Drizzle the sauce over top and garnish with basil leaves, serve and enjoy!
