Ingredients

1 pound loaf of white bread , crusts removed and bread torn into pieces
2 pounds pork shoulder roast
2 pounds veal shoulder roast
2 beef neck bones
2 large carrots , cut into 2 inch pieces
2 stalks celery , cut into 3 pieces
1 large yellow onion , cut into wedges
48 eggs
12 cloves garlic , pressed
3 green onions , chopped
1 cup chopped fresh chives
salt and pepper to taste
Sekanice (Easter Meatloaf) is a traditional Czech dish that is typically served during the Easter holiday. Instructions

1.Preheat the oven to 350°F (180°C).
2.Place the torn bread into a large bowl and soak in water for 5 to 10 minutes. Drain the bread and set it aside.
3.In a large pot, add the pork shoulder, veal shoulder, beef neck bones, carrots, celery, and yellow onion with enough water to cover the meat and vegetables. Bring to a boil and then reduce heat to low. Simmer for 2 to 3 hours until the meat is cooked through and falling off the bones.
4.Remove the meat and bones from the pot and set aside. Strain the broth and discard the solids. Skim any fat from the top of the broth and set the broth aside.
5.In a large mixing bowl, combine the bread, 48 eggs, pressed garlic, chopped green onions, chopped fresh chives, salt, and pepper. Stir to combine.
6.Add the cooked meat to the mixing bowl and use your hands to mix everything together.
7.Grease a large loaf pan or roasting pan and spread the meat mixture inside.
8.Pour the reserved broth over the meat mixture.
9.Bake in the preheated oven for 1 to 2 hours, until the top is golden brown. Allow to cool for a few minutes before slicing and serving.
