Ingredients

2 egg whites
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1/2 cup sugar
1/4 teaspoon mint extract
3 -6 drops green food coloring
green colored sprinkles ( optional )

Instructions

1.Preheat oven to 225°F (110°C).
2.In a large bowl, beat the egg whites with an electric mixer until foamy.
3.Add the cream of tartar and salt, and continue beating on medium speed until soft peaks form.
4.Gradually sprinkle in the sugar, continue beating on high speed until stiff peaks form.
5.Mix in the mint extract and food coloring.
6.Spoon the mixture onto a baking sheet lined with parchment paper, and sprinkle with green colored sprinkles ( optional ).
7.Put in the oven and bake for 1-2 hours, until meringues are crisp and dry.
8.Remove from the oven and allow the meringues to cool before serving.
