Ingredients

8 ounces self-raising flour ( preferably self-raising soda bread flour )
1 pinch salt
1 ounce butter or 1 ounce hard margarine
1 egg , beaten
5 fluid ounces buttermilk
eggs or milk , to glaze
cinnamon sugar , to dust
1 teaspoon dry mustard
2 ounces cheese , grated
2 tablespoons fresh herbs , chopped ( basil or whatever you like )
Irish Buttermilk Scones with Cheese & Herb are a savory variation of the traditional sweet scone. They are perfect for breakfast, brunch, or an afternoon snack. Instructions

1.Preheat the oven at 200 °C (392 °F).
2.Sift flour and salt together, then rub in the butter until the mixture looks like breadcrumbs.
3.Add cheese, mustard and herbs and then beat the egg, add to the mixture along with the buttermilk. Mix quickly to a soft dough.
4.Cover with a clean cloth and rest for 5-10 minutes.
5.Flour the work surface and pat the dough into a round about 2.5cm (1 inch) deep. Cut into wedges or rounds as preferred.
6.Place on a lightly floured baking sheet and brush with egg or milk. Sprinkle with cinnamon sugar.
7.Bake for 10-15 minutes until golden.
8.Serve warm or cold, with butter, marmalade or jam.
