Ingredients

2 kg potatoes
2 large onions , peeled and sliced thickly
450 g good quality pork sausages
450 g bacon , piece thick cut
500 ml water
1 1 beef or 1 chicken stock cube , if ham stock is n't available
3 -4 tablespoons fresh parsley , chopped
salt ( to season )
coarse-ground pepper ( to season )

Instructions

1.Preheat the oven to 180C/350F/gas 4.
2.Cut the sausages into chunks and divide the bacon into thick pieces.
3.Peel and slice the potatoes and onions.
4.Layer the potatoes and onions in a casserole dish then add the chunks of sausage and pieces of bacon on top.
5.Add water and stock cube (beef or chicken), then sprinkle with chopped parsley, salt and pepper.
6.Cover with a tight-fitting lid and cook in the oven for 1.5 hours.
