Ingredients

1 package Pillsbury sugar cookie dough
3 cups shredded sweetened coconut , divided
1/2 cup dark cocoa
2 egg whites
1/2 cup chocolate chips
1/4 cup irish cream coffee creamer
16 ounces of holiday colored M & M 's
Irish Cream Filled Cookies are a delightful and easy delicacy to make for a special occasion. Instructions

1.Preheat your oven to 350°F (175°C).
2.In a bowl, mix the cookie dough, one egg white, half a cup of shredded coconut, cocoa powder, and M & M 's. Stir well.
3.On a lightly greased baking sheet, place rounded tablespoonfuls of dough two inches apart.
4.Press a hole into the center of each ball using the end of a wooden spoon's handle.
5.For the Irish cream filling, combine the remaining egg white, one cup shredded coconut, chocolate chips, and Irish cream coffee creamer in a large bowl.
6.Mix well and spoon into each cookie's center.
7.Bake for 12-15 minutes or until the cookies are slightly golden.
8.Remove from oven and let them cool before serving.
