Ingredients

2 tablespoons olive oil
2 leeks , including tender green parts
1 1/2 lbs broccoli , florets and stalkes cut into 1-inch pieces
4 cups chicken stock
salt and pepper
1/4 cup sour cream or 1/4 cup plain yogurt
2 tablespoons finely chopped fresh chives

Instructions

1.Clean the leeks. Slice just the white and light green parts into rounds.
2.In a soup pot heat the olive oil. Add the leeks and saute for a few minutes until the leeks are just beginning to brown.
3.Add the broccoli and stock to the pot. Bring to a boil over high heat then reduce the heat to low. Cover and simmer for 15 minutes or until the vegetables are very tender.
4.Puree the soup in a blender, working in batches if necessary.
5.Return soup to the pot and transfer pot back to the heat. If soup is too thick add more stock. Season to taste with salt and pepper.
6.To serve, ladle soup into bowls and add a dollop of sour cream or yogurt to each bowl. Sprinkle with chives. Serve hot and enjoy!
