Ingredients

4 lbs mussels , scrubbed and debearded
1/2 cup unsalted butter , cubed , at room temperature
1/2 cup lemon juice , fresh squeezed
4 shallots , minced
4 bay leaves ( fresh is best )
salt & freshly ground black pepper

Instructions

1.Rinse the mussels under cold water, and scrub them if necessary.
2.In a large pot with a lid, melt the butter over medium heat.
3.Add the minced shallots and cook until soft, around 3 minutes.
4.Add the lemon juice, bay leaves, and a pinch of salt and black pepper.
5.Pour in around 1 cup of water and bring the liquid to a boil.
6.Add the mussels to the pot and cover with the lid.
7.Cook until the mussels open, approximately 5-7 minutes.
8.Remove the mussels from the pot using a slotted spoon and discard any unopened shells.
9.Serve the mussels with the cooking liquid, with crusty bread on the side.
